I These Coconut Cream Pie Overnight Oats are the perfect way to enjoy your favorite dessert for breakfast! Creamy oats mixed with coconut yogurt topped with toasted almonds and coconut!

First, they are SO easy! You just mix everything up the night before, stick the oats in the fridge, and in the morning, breakfast is all ready to go! And best of all, they are so versatile! I know some people don’t like the texture of cold oats, but I don’t mind it at all. If you prefer your oats warm, you can also heat these up a bit!

I’m slightly obsessed with these coconut overnight oats. They are creamy and full of coconut flavor! I used coconut milk (you can use coconut milk from a can or carton) and coconut Greek yogurt.

You can experiment with light or full fat coconut milk and the same goes for the yogurt depending on what you prefer.

I topped my oats with toasted coconut and almonds as adore the crunchy topping. Sliced bananas are also delicious with coconut or you can also top with berries.

To make this recipe, you will need:

  • Old fashioned oats are the base of the recipe, of course. I prefer the texture of old fashioned oats over quick oats for overnight oats as quick oats get a bit mushier.
  • Coconut milk makes these so perfectly creamy and adds coconut flavor.
  • Greek yogurt also makes these overnight oats rich and more filling and adds protein. You can use coconut flavored or plain yogurt.
  • Maple syrup is the sweetener for this recipe. You add as much as you prefer for your desired sweetness.
  • Coconut and vanilla extract for added flavor
  • Toasted coconut and sliced almonds to toast and serve on top. I also like to add a few slices of banana!

Recipe Tips and Suggestions:

  • I like to use old fashioned oats for overnight oatmeal. Quick oats can get a bit too soft and mushy. Old fashioned oats keep better overnight.
  • Feel free to experiment with lower fat coconut milk and/or yogurt. Full fat will result in a thicker and creamier texture, but if you are trying to keep this lower in fat and calories, lower fat milk and yogurt work very well!
  • I’m all about mixing textures with overnight oats so I like to top mine with some toasted coconut and sliced almonds.
  • Sliced bananas and berries are also great toppings!
  • You can easily double this recipe for meal prepping for the week and either store in individual portioned containers (I like to do it this way) or keep in a larger container and scoop out as desired.
  • The oats are best enjoyed within three to five days.

The creamiest and dreamiest oats all prepped the night before and ready to go in the morning!

Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup lite coconut milk
  • 5 ounces coconut flavored or plain Greek yogurt
  • 1/4 tsp. cinnamon
  • pinch of salt
  • 1 tablespoon maple syrup (or to taste; can also use stevia)
  • 1 teaspoon vanilla
  • 2 tablespoons unsweetened shredded coconut
  • 1 tablespoon cup sliced almonds

Instructions

  1. In a jar or container, stir together the oats, coconut milk, yogurt, cinnamon, salt, sweetener, and the vanilla extract until well-combined. Cover and chill overnight.
  2. Heat a fry pan over medium heat. Add the shredded coconut and sliced almonds. Cook the mixture until the coconut is golden and the sliced almonds are toasted, about 3-5 minutes. Remove from the heat (you can also make this the night before if desired). Sprinkle on the oats before eating.

    I’m wondering when the oats are cooked – boiled or baked? something, because I’ve never eaten uncooked oats before. “Coconut cream anything” sounds good to me, just wondering…

      That’s the beauty of overnight oat recipes, you don’t have to cook the oats. They soak up the liquid from the yogurt and milk overnight so in the morning they are nice and soft. The texture is a little different than eating warm cooked oats, but they still become soft!

      B, these are really meant to be eaten cold, but you could certainly try heating them up, though, I haven’t tried that.

      Do you go onto recipies for peanut butter and scoff that there’s peanuts in it and some people have allergies? Roasted duck recipe and point out that it isn’t vegan?

      2 minute oats are “quick oats”. For overnight oats, old fashioned oats are the best as quick oats tend to turn to mush. You can buy gluten free old fashioned oats.
