How to make Honey Roasted Carrots

Ingredients

  • 2 lbs. carrots peeled and cut into 2-inch chunks see notes
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon fresh ground black pepper
  • 3 tablespoons butter
  • 3 tablespoons honey
  • teaspoon cayenne pepper
  • ½ tablespoon fresh thyme or fresh parsley

Instructions

  • Preheat oven to 425 degrees.

  • In a large bowl, stir together the carrots and olive oil. Sprinkle with salt and pepper. Place them on a large baking sheet covered with parchment paper. Roast for 20 minutes or until fork tender.
