  • 1 oz Rosemary Syrup - recipe follows
  • 4 chunks Fresh Watermelon
  • 1 wedge Fresh Lime - for squeezing in
  • 1 Splash Sparkling Water - for topping off

Instructions

  • In a tall glass, muddle chunks of fresh watermelon until crushed and juicy.

  • Add rosemary syrup (recipe follows) and squeeze in the lime wedge.

  • Top off the mixture with fresh ice and splash in the dry white wine.

  • Give the mixture a gentle stir.

  • Top this all off with a little splash of sparkling water and give it a gentle stir once more.

  • Garnish with watermelon chunk and sprig of fresh rosemary.

  • 4 Sprigs Rosemary - fresh
  • 1 cup Water
  • 1 cup Sugar

Instructions

  • In a saucepan over low heat combine water and sugar and toss in rosemary sprigs.

  • As the liquid heats in the pan, gently poke rosemary sprigs with a fork. This will kickstart the steeping process and draw out the aromatics of the rosemary.

  • After about 5 minutes, when the sugar is melted through and the rosemary begins to give off its fragrance, turn off the heat and cover.

  • Steep with the heat turned off in the saucepan for another 2 minutes.

  • Cool and strain into a jar with a tight fitting lid and store in the refrigerator for three to four weeks.
