This year Valentine’s Day lands on a Saturday! I’m excited because it’s rough making a big deal out of the holiday during the work week, particularly if you have a busy family. I’m genuinely hoping to see a lot of people capitalize on the timeliness of the holiday this year, as it’s easier to get babysitters on Saturdays, so hopefully lots of Mommy’s and Daddy’s will make it out for dinner. Also, Saturday means extra time to celebrate and be reminded of how precious your family is!

I encourage you to put the business of life on hold for a couple of hours this weekend, spend some quality time with your kids, and tell them how much you love them and how wonderful they are. This doesn’t have to cost a lot of money. Something like a simple tea party with Mommy and Daddy can be one of the more memorable moments in a child’s life. Today’s recipe for Valentine’s Tea Party Sandwiches is easy to make, so kids can get involved, and is quite tasty. Also, tea parties don’t have to just be relegated to little girls. In our home we invited my son’s dinosaurs and T-rex was rude, made a mess, and my son had fun!

Valentine’s Tea Party Sandwiches

Serves: 5 Serving Size: 2 sandwiches

Prep Time: 15 minutes (more if there are any little helpers)

Ingredients

  • 1 8 oz package of cream cheese
  • 1 Tbsp sugar
  • 1 1/2 Tbsp lemon juice
  • 1 1/2 tsp almond extract
  • 1/8 tsp salt
  • 1 C frozen cherries thawed, drained, and chopped (you will end up with 1/3 C chopped cherries)
  • 3 Tbsp sliced raw almonds
  • 20 slices of healthy, soft bread
  • heart shaped cookie cutter

Directions

1. A couple of hours before making your tea sandwiches, you’ll want to take your cherries out of the freezer to thaw out. If you are a poor planner (like me), you can always defrost them in the microwave. Once thawed, drain the juice off of the cherries, chop, and set aside. You’ll start out with 1 C of frozen cherries and end up with 1/3 C of thawed out and chopped cherries.

2. In a small mixing bowl, using a hand mixer, mix together your cream cheese, sugar, lemon juice, almond extract, and salt.

3. Stir your chopped cherries and sliced almonds into the cream cheese mixture.

4. Now is a good time to include little ones with making sandwiches for their tea party. Using a heart shaped cookie cutter, cut out 20 heart shaped pieces of bread. I got my heart shaped cookie cutterValentine's Tea Party Sandwiches - Simple Seasonal (2) from Amazon.

5. To make the sandwiches, spread your cherry almond creamed cheese on one slice of heart-shaped bread, and then top it with another piece of heart shaped bread. If your kids are helping, be sure to provide them with a dull knife.
